Say no unequivocally to guides, fake guards, etc. They are everywhere and extremely adept at getting to you and hooking on.

You will be harassed to purchase tour and merchandise. We were tricked into riding camel because we were taking pictures in front of camels. were charged 200 per person

I went with family members and not a professional guide on a Sunday midday. The traffic across town was light and we were able to drive through the complex stopping to walk around and take photos with ease. By coming at midday we avoided the main tour bus onslaught of visitors.

At night, you can sit on the rooftop to watch the Giza Lightshow while having a couple of drinks and dinner.

Wander on your own in the tombs above the pyramids. Looks deserted but it is amazing - you can just wander on your own and see amazing things without the crowds. Also, do not let anyone convince you to get on their camel for a "photo" - unless you are willing to go for a camel ride and be prepared to pay regardless of what they tell you (it's basically kidnapping by camel haha).
