    Baptiste Ross-Bonneau, award-winning sommelier, grandson of a winemaker, and expert in
    Occitanie vineyards, accompanies you on a unique route: starting at Rue Trivalle,
    at the bottom of the city, walking up to the ramparts of the city listed as a UNESCO World Heritage Site,
    World Heritage Site, glass in hand.
    Along the way, he opens three wines that he has selected himself: not the labels that you
    find everywhere, but wines from independent winemakers, lesser-known appellations, and cuvées that tell the story of this part of France better than any live guide
    guide.
    One hour's walk. Three wines. One story. The best way to start
    your stay in Carcassonne!

    Step 1: Rue Trivalle · Wine 1 (white or rosé)
    Baptiste welcomes you at the bottom of the ascent to the Cité. He uncorks the first wine, a
    fresh white or rosé wine from the Languedoc and presents his philosophy: wine from the South is
    what you think.
    Stop 2: Les Lices · Wine 2 (red)
    Halfway through, between the two rows of ramparts, Baptiste opens the second wine: a red
    from Minervois or Corbières. He tells you about the winemaker, the vintage, the soil. The surrounding landscape
    you does the rest.
    Stage 3: Inside the Cité · Wine 3 (the gem)
    Once inside the walls, Baptiste chooses a quiet spot away from the flow of tourists. He
    uncorks the third wine, his current favorite, and shares it. Medieval cobblestones.
